When the craving hits for cake, nothing else will satisfy! But who really wants to make an entire cake? That's why mug cakes are the perfect solution. It's a single-serve cake made right in the microwave.

The next time your craving hits, feel free to grab your favorite mug or a small ramekin and try one of these five delicious mug cake recipes!

Banana Bread Mug Cake

Ingredients

  • 1/3 cup mashed bananas ⁠
  • 1 tablespoon olive oil⁠
  • 1 tablespoon almond milk ⁠
  • 1 tablespoon brown sugar ⁠
  • 1 tablespoons flour ⁠
  • 1 scoop Smooth Vanilla Clean Lean Protein
  • pinch of sea salt ⁠
  • pinch of cinnamon ⁠
  • 1/2 teaspoon baking powder⁠
  • 1 tablespoon chopped walnuts and/or chocolate chips ⁠

Method

  1. In a mug, add in the mashed banana, oil, milk and sugar. Mix together to combine completely and banana is completely mashed.
  2. Add in the flours, baking powder, salt and cinnamon. Make sure it’s all incorporated.
  3. Add in the nuts & chocolate chips if using and fold in. Feel free to sprinkle some of them on top.
  4. Microwave for about 80 seconds. It's better for it to be slightly undercooked than overcooked.
  5. Sprinkle some coarse sea salt on top and enjoy!

 

Festive Fall Mug Cake

Ingredients

  • 1 whole egg (or vegan alternative)
  • 1 serving Rich Chocolate Kids Good Stuff
  • 1/4 teaspoon baking powder
  • Enough almond/non-dairy milk to make a thick batter
  • Optional: 1/2 tablespoon vegan chocolate chips 

Method

  1. Mix everything together till well combined. 
  2. Pour into a sprayed ramekin/mug and top with fall-colored sprinkles. 
  3. Microwave for 60-90 seconds (less time equals a more gooey mug cake). 
  4. Top with a dollop of dairy-free whipped cream to make it even more decadent!

Vanilla Protein Mug Cake

Ingredients

  • 2 scoop Smooth Vanilla Clean Lean Protein
  • 1 teaspoon sugar⁠
  • 1 tablespoon vegan butter⁠
  • 1/4 cup Unsweetened Applesauce⁠
  • 1 tablespoon Coconut Flour⁠
  • 1/2 tablespoon Vanilla⁠

Icing⁠:

Method

  1. Mix all cake ingredients in a small bowl. ⁠
  2. Add to a small (lightly greased) ramekin or microwave safe bowl.
  3. Microwave the cake for 45-60 seconds. 
  4. Once the cake is finished, mix your icing ingredients, except for the sprinkles, in a small bowl. Top the cake with the icing before adding the sprinkles.

Double Chocolate Mug Cake

Ingredients

  • 1 1/2 tablespoons buckwheat flour
  • 1 tablespoon coconut flour
  • 1 1/2 tablespoons cocoa powder or cacao powder
  • 1/2 teaspoon baking powder
  • 1 scoop Rich Chocolate Clean Lean Protein
  • 1 tablespoon almond butter or other nut/seed butter
  • 1/3 cup unsweetened almond milk or milk of choice
  • 1 handful chocolate chips or chunks

Method

  1. In a medium-sized mug, whisk together the flours, cocoa powder, baking powder, and protein powder.
  2. Add the almond butter and milk, and mix until a smooth batter forms*
  3. Top with the chocolate square, or fold in the chocolate chips if going for that option.
  4. Microwave at medium power (500W for me) for approximately 2 minutes, or until set**
  5. Allow to cool for at least 2 minutes and enjoy!

    Paleo Lemon Poppyseed Mug Cake

    Ingredients

    • 2 tablespoons cassava flour
    • 1 tablespoon almond flour
    • 1 tablespoon coconut flour
    • 1 scoop Smooth Vanilla Clean Lean Protein
    • 1/4 teaspoon baking powder
    • 1/8 teaspoon baking soda
    • 1 tablespoon fresh lemon juice
    • 1/4 teaspoon lemon zest
    • 1 tablespoon cashew butter
    • 2 tablespoons liquid egg whites or 1 egg white as original recipe is written (or vegan alternative)
    • 1/4 cup almond milk unsweetened
    • 1/4 teaspoon poppy seeds

    Method

    1. Add dry ingredients to a mug and whisk well.
    2. Add the wet ingredients and mix until you have a smooth batter, then gently fold in the poppy seeds.
    3. Microwave on medium power (500W for me) for 1min 30sec or just until set. Exact timing will depend on your microwave and wattage settings, so just be sure to check after about 1 minute and keep microwaving in 15 second increments to prevent overcooking!
    4. Top with whatever you like! I prefer a square of chocolate, or you could do a dollop of coconut yogurt to stay in the summery theme and enjoy!
