Pumpkin everything surrounds us these days. But many pumpkin spice foods and drinks are loaded with empty carbs and unnecessary sugar. However, your options don't end at sweet yet unhealthy treats. With just a few simple ingredients that you probably already have in your pantry, you can enjoy your favorite fall flavor, but without the empty calories and risk of putting on the fall fifteen. Enjoy these protein pumpkin muffins anytime, including a healthy breakfast, afternoon snack, or office treat. These muffins are vegan and gluten free and free of refined sugars.

Ingredients
  • 2 cups gluten free flour
  • 2 scoops Smooth Vanilla Clean Lean Protein
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1 tsp of baking powder
  • 1 tsp of baking soda
  • 1 tsp of apple cider vinegar
  • 1 tsp of salt
  • 3/4 coconut sugar
  • 1 can of pumpkin
  • 1/2 cup vegan butter
  • 1/2 cup maple syrup
  • 1 flax egg (1 tbsp of ground flaxseed mixed with 2.5 tbsp water)
Method
  1. Preheat oven to 375 degrees
  2. Combine dry ingredients
  3. Mix in wet ingredients
  4. Place in greased muffin tin
  5. Bake for 20 minutes
