Remix Thin Mints Girl Scout Cookies
If you love Thin Mints Girl Scout Cookies but want something healthier with less sugar (and the added bonus of protein), check out this healthy and easy to make recipe from our friend Gigi Eats Celebrities.
1 Cup Rich Chocolate Nuzest Protein Powder
1 Tbs Cocoa Mint Nuzest Quick Vita Kick (optional)
3 1/2 Tbs Unsweetened Cocoa Powder
5 Tbs Barlean Butter Flavored Coconut Butter
1/2 Tsp to 1 1/2 Tsp (depending on your sweet tooth) Liquid Vanilla Stevia Extract (or your favorite sweetener)
1 Tsp Peppermint Extract
1/2 Cup - 1 Cup Water
1. Add all ingredients into a bowl and¬†mix until well combined.
2. Shape cookie batter into Thin Mint shapes and place on serving plate, platter, tray (whatever fits in your fridge/freezer).
3. Put in your fridge or freezer for several minutes until they become firm. Or you can do what I did and just eat em' because I have no patience for "setting." Ha!
