When the craving hits for cake, nothing else will satisfy. But who really wants to make an entire cake? That's why mug cakes are the perfect solution! It's a single-serving cake (just for you!) made right in the microwave.

BANANA BREAD MUG CAKE

Ingredients

  • 1/3 cup mashed bananas ⁠
  • 1 tbsp olive oil⁠
  • 1 tbsp almond milk ⁠
  • 1 tbsp brown sugar ⁠
  • 1 tbsp flour ⁠
  • 1/2 serving Smooth Vanilla Clean Lean Protein⁠ by Nuzest
  • 1/2 tsp baking powder⁠
  • 1 tbsp chopped walnuts and/or vegan chocolate chips ⁠
  • Pinch of cinnamon
  • Pinch of sea salt

    Method

    1. In a mug, add in the mashed banana, oil, milk, and sugar. Mix together to combine completely and the banana is completely mashed.
    2. Add in the flours, baking powder, salt, and cinnamon. Make sure it’s all incorporated.
    3. Add in the nuts and chocolate chips (if using) and fold in. Feel free to sprinkle some on top too.
    4. Microwave for about 80 seconds. It's better for it to be slightly undercooked than overcooked.
    5. Sprinkle some coarse sea salt on top and enjoy!

     

    FESTIVE FALL MUG CAKE

    Ingredients

    • 1 egg alternative (such as flaxseed eggs)
    • 1 serving Rich Chocolate Kids Good Stuff by Nuzest
    • 1/4 tsp baking powder
    • Enough almond/non-dairy milk to make a thick batter
    • Optional: 1/2 tablespoon vegan chocolate chips

    Method

    1. Mix everything together until well combined.
    2. Pour into a sprayed ramekin/mug and top with fall-colored sprinkles, if desired.
    3. Microwave for 60-90 seconds (less time equals a more gooey mug cake).
    4. Top with a dollop of dairy-free whipped cream to make it even more decadent!

    VANILLA PROTEIN MUG CAKE

    Ingredients

    • 1 serving Smooth Vanilla Clean Lean Protein by Nuzest
    • 1 tsp sugar⁠
    • 1 tbsp vegan butter⁠
    • 1/4 cup unsweetened applesauce⁠
    • 1 tbsp coconut flour⁠
    • 1/2 tbsp vanilla⁠

    Icing⁠

    Method

    1. Mix all cake ingredients in a small bowl. ⁠
    2. Add to a small (lightly greased) ramekin or microwave safe bowl.
    3. Microwave the cake for 45-60 seconds.
    4. Once the cake is finished, mix your icing ingredients (except for the sprinkles) in a small bowl. Top the cake with icing before adding the sprinkles.

    DOUBLE CHOCOLATE MUG CAKE

    Ingredients

    • 1 1/2 tbsp buckwheat flour
    • 1 tbsp coconut flour
    • 1 1/2 tbsp cocoa powder
    • 1/2 tsp baking powder
    • 1/2 serving Rich Chocolate Clean Lean Protein by Nuzest
    • 1 tbsp almond butter or other nut/seed butter
    • 1/3 cup unsweetened almond milk or plant-based milk of your choice
    • 1 handful vegan chocolate chips

    Method

    1. In a medium-sized mug, whisk together the flours, cocoa powder, baking powder, and protein powder.
    2. Add the almond butter and milk, then mix until a smooth batter forms.
    3. Top with or fold in the chocolate chips,
    4. Microwave at medium power for approximately 2 minutes, or until set.
    5. Allow to cool for at least 2 minutes and enjoy!

      LEMON POPPYSEED MUG CAKE

      Ingredients

      • 2 tbsp cassava flour
      • 1 tbsp almond flour
      • 1 tbsp coconut flour
      • 1/2 serving Smooth Vanilla Clean Lean Protein by Nuzest
      • 1/4 tsp baking powder
      • 1/8 tsp baking soda
      • 1 tbsp fresh lemon juice
      • 1/4 tsp lemon zest
      • 1 tbsp cashew butter
      • 2 vegan alternative eggs (such as flaxseed eggs)
      • 1/4 cup unsweetened almond milk
      • 1/4 tsp poppy seeds

      Method

      1. Add dry ingredients to a mug and whisk well.
      2. Add the wet ingredients and mix until you have a smooth batter, then gently fold in the poppy seeds.
      3. Microwave on medium power for 90 seconds or until just set. Exact timing will depend on your microwave and wattage settings, so be sure to check after about 1 minute and keep microwaving in 15 second increments to prevent overcooking!
      4. Top with whatever you like! I prefer a square of vegan chocolate, or you could do a dollop of plant-based coconut yogurt to stay in the summery theme and enjoy!
