Minty Chocolate Vegan Pudding Recipe
2 scoops Nuzest Just Fruit & Veg, Cacao Mint
1/2 cup pitted dates
1 can coconut milk (not low-fat)
1/2 cup coconut oil, melted
1/2 cup cocoa powder
16 oz frozen cauliflower
1-2 tablespoons coconut nectar, or liquid sweetener (adjust to taste)
1/2 teaspoon peppermint extract

1. Thaw cauliflower on countertop until defrosted.
2. Process all ingredients in a high speed blender until smooth.
3. Add to individual serving dishes and transfer to refrigerator. Chill for at least 3 hours before serving.
