Spanish Delight Protein Cups Recipe
1/3 cup oats, gluten free if needed
1 tbsp chia seed
1/2 serving Just Natural Clean Lean Protein by Nuzest
1 tbsp nutritional yeast
1/2 tsp baking soda
Pinch of salt
6 tbsp vegetable broth, low sodium
2 tbsp tomato sauce
1 tbsp olives
1 tbsp chopped pepper
1 tbsp chopped cilantro
1 tbsp diced tomato
1/2 tsp cumin
I have fond memories of my grandmother making a casserole dish which she lovingly called, “Spanish Delight.” The flavors of this childhood favorite hold a strong, comforting memory for me. These muffin cups remind me of those same festive flavors… with minimal effort. Customize them as you wish with the add-ins you have on hand… and make a few extra, as they make great lunches on the go!

1. Add all dry ingredients into a high powered blender, and use a dry blade container. Process until coarsely ground.
2. Remove from blender into a small mixing bowl and combine with remaining ingredients.
3. Coat 2 ramekins with oil and divide mixture between each. Microwave on high for 2 minutes, 30 seconds.
4. Let cool slightly, carefully remove from ramekin, and serve garnished with pico de gallo and lime.
