Nutty Protein Cakes
1 scoop Nuzest Smooth Vanilla Clean Lean Protein
1 cup cashews
1 cup almonds
1/2 cup walnuts
1/2 teaspoon of salt, or to taste
1 teaspoon alcohol free vanilla
1/2 cup prunes
1/2 cup dates, pitted
1/2 cup cacao nibs
You will be amazed how easy these Nutty Protein Cakes are to make! Just toss a few heart healthy ingredients into your food processor, and within a few minutes your family will be swooning with smiles! (Adapted from Chef Ambershae's 5 minute blondies)
1. Place cashews, almonds, and walnuts in a food processor and pulse until nuts are broken into smaller pieces (but not finely ground).
2. Add Nuzest Clean Lean Protein, salt, and vanilla. Process by pulsing just to combine.
3. Turn processor to high and while running, gradually add prunes and dates. Continue until the mixture begins to pull and stick together. Add cacao nibs and pulse several times just to incorporate.
4. Press the mixture into silicone muffin molds, packing firmly. Gently press out of mold and sprinkle with a few more nibs and some strawberry slices.
